Hubs was talking to me the other day about impressing himself when he played basketball, not so much now that his knees don't cooperate, but back in the day when he was playing nonstop.
I think I know what he was talking about, except mine came from cooking. Occasionally I impress myself, like last night... You know, that 'Wow! I did a good job!' feeling that sort of shocks you?
Baked Tacos
a super easy, delicious recipe
Cook a lb. of ground turkey.
Preheat the oven to 375 degrees and spray a 9x13 pan.
Add taco seasoning, a small can (8 oz.) of tomato sauce (instead of water), and about half a can of refried beans.
Spoon the mixture into soft taco shells and top with a handful of shredded cheese.
I fold each shell just a bit so I can put them in the pan in twos. If I portion the meat mixture just right I can make about 10-12 tacos. (They're great as leftovers!)
Cover with foil and bake for 5-6 minutes. Take off the foil and bake for about 5 more minutes.
Top with your favorite taco toppings. I prefer lettuce and salsa. Hubs just eats them "as is." We both love a side of Mexican rice.
