New Recipes!

Love, love dinner with friends!

I tried a new recipe last night:

Mini Mexican Pizzas

Preheat the oven at 425 degrees. 

Spray a muffin tin with a cooking spray.

Lay out tortilla shells and cut out medium-sized circles (not sure how big that means) with a knife or cookie cutter.

Put each circle into a muffin tin hole. My circles were sort of eyeballed. They were big enough to fit in like muffin wrappers, maybe too big. 

The original recipe calls for 1 cup of ground turkey, but I used about a lb. I combined 1 lb. turkey cooked with taco seasoning, a half can of refried beans, and a small can of tomato sauce in my skillet. I used a small scoop to fill each muffin cup and put some cheese on top. 

Bake for about 12-15 minutes. 

I topped mine with some lettuce and salsa, but you could do whatever your tastebuds desire. 

They were good and made about the same way as baked tacos
minus one additional step (cutting the shells into circles).

I think I'll stick to baked tacos in the future.

The Pinterest pin picture sure looked a lot better than mine!

diet 7-up

Blend.

Ingredients to a Great Wednesday Evening

Bible Study...
Steaks and chicken on the grill...
Corn on the cob...
Yummy strawberry watermelon smoothies...
Friends...
Lincoln Lawyer, the movie...

All ingredients to a great Wednesday evening.

I wish I could share the recipe for our smoothies, but it went something like this:

A handful of frozen strawberries.
A handful of frozen watermelon.
Some strawberry ice cream.
A tablespoon of sugar.
Some milk.

At first it was heavy on the watermelon and a bland after-taste.

Some more ice cream.
Some more milk.
A squirt or two of strawberry syrup.

Blend. Delicious!

Orange Julius, Another Tasty Treat

Tonight's drink of choice was the good ol' Orange Julius. Since we didn't want to truck it to the mall 30 minutes away to purchase an orange julius, we opted to make some ourselves. Surprisingly easy. Quite tasty.

Blend a can of frozen orange juice (or other juice flavor), 1 cup milk, 1 cup water, 1/4 cup sugar, 1/4 cup powdered sugar, and 1 tsp. vanilla.

Slowly add 8-9 ice cubes into the blender one at a time.

Serve with a smile! Yum!

I think later this week I want to try a 'Strawberry Breeze' Julius because the Strawberry Julius is my favorite when we go by the food court in the mall.

Butterbeer, A Tasty Treat

Hubs and I decided to try and make Butterbeer last night, a drink from the Harry Potter series. So we ran to the store and grabbed some...


...cream soda, butterscotch syrup***, and heavy whipping cream.


We blended (1 1/2 cups) cream soda, butterscotch syrup, and (2 cups) ice together until it was slushy.


Then, we mixed (6 tbsp) heavy whipping cream and butterscotch syrup in a bowl to create a foam to top it off.





Not too bad! We'll have to make this treat again before we see the last Harry Potter movie in the theatres.









***  The actual recipe we found on the internet called for alcohol (butterscotch schnapps: drink 6 tbsp & foam 1 tbsp) but we decided on the non-alcoholic version using butterscotch syrup.
